{Project: Food Budget} Week 26 - Half Way!



Week 26 brings us to the half way mark of {Project: Food Budget}, how time flies!

The creamy avocado pasta was a hit with the fam last week, so it features again this week.
I'm forever reinventing my approach to menu planning as I ride the often frustrating road that is tight budget, many kids, many wants...and a good handful of "that's disgusting" (plural)
This week I'm all about simple - save the trouble, it's not likely to be appreciated!
That said, still driven by fresh ingrediants, simple but beautiful flavours and as always, a lot of lemons, fresh herbs, and garlic:D

  • 6 to feed, 3 big ones and 3 smaller ones.
  • 2 meat meals a week and 5 vegetarian.
  • 4 packed lunches per day.
  • baby food too...
  • budget is $200 per week inclusive breaky, lunch, tea and snacks.

Thursday: Creamy Avo Pasta

Cook 1 serving angel hair pasta according to package instructions, about 12 minutes (including boiling time!). Meanwhile, combine the juice from ½ a lemon1 garlic clove1 tbsp. olive oil,½ of an avocado and 1/8 cup basil in a food processor and puree. Toss together pasta and sauce and season with salt to taste.

Friday: Open White Bean Sandwich

Mash ¼ can rinsed and drained white beans with 1 tsp. olive oil and a pinch of salt and pepper. Toast 1 slice of whole-grain bread and spread with the bean mixture. Top with 1 slice red onion5 cucumber slices, and ¼ avocado (sliced).

Sunday: Home made pizza
Monday: Lemon & Garlic Chicken

{Project: Food Budget} Week 24



Honestly, I don't know what I'd do without Project Food Budget...it has really helped me to get a handle on the monetary cost and the physical / mental cost of food. It has made me acutely aware of the importance of whole foods, raw foods, fresh foods and local foods. I have a long way to go to achieving my food dream (yes, I have such a thing!) but I'm on my way - and that people, is what it's all about!

I haven't recapped my stats in a while so here they are:

6 to feed, 3 big ones and 3 smaller ones.
2 meat meals a week and 5 vegetarian.
4 packed lunches per day.
baby food too...
budget is $200 per week inclusive breaky, lunch, tea and snacks.

I'm thinking of late that I will work towards a 'night' menu...you know the 'it's risotto night' kinda thing.
So far, I'm thinking pizza night, risotto night, frittata night, dips 4 dinner night, burger night...it's a work in progress:D

This week:

Thursday - Yoghurt flat bread with dips
Friday - Couscous and cannellini bean burgers
Saturday - Lemon & garlic chicken casserole
Sunday - Home made pizza
Monday - Farro soup
Tuesday - Beets and horseradish risotto
Wednesday - leftovers

{Project: Food Budget} Week 23


Every week for a long time now, my family has mostly been eating new-to-us recipes because I like to cook and try new things. I'm slowing it down for a bit this week and revisiting some faves (both taste and budget) for a while. That will help me to remember some of what we've actually eaten, and add some to the 'regular' rotation - if one exists that is...

For my 6 hungry mouths this week we have:

Thursday - Curried egg salad
Friday - Bangers 'n mash (Mr 3's request)
Saturday - Mung bean oh gee this is good and cheap frittata
Sunday - Home made pizza
Monday - Baked ricotta & avo dip
Tuesday - Spaghetti & meatballs (Miss 5's request)
Wednesday - Dahl

...and for kiddie snacks:

High fibre oat bars & Speedy chocolate muffins
and there's sure to be others.

Total spent so far is $112.00 (I really am getting better at this!)

March brings a million birthdays in my family. The old, the young, the in-betweeners...all March!
So...March must be the frugal gift month:P
I have plans for this Pumpkin Fudge for both my mum and mil and I plan to package it like this. Before I get to that though, I need a gift for my gorgeous little very nearly 2 nephew Ross - that kid has a smile that melts...
Anyway, as I continue to practice (s? c?) my sewing skills I need to stick to simple shapes and forgiving fabrics - and boy was this fleece forgiving! lucky that.
My 5 year old chose this fabric some time ago for its rainbow appeal and here it is fashioned into my very first Snaggle Tooth Dino Friend - inspired by my dino loving 3 year old. I think there will be more of these little guys in my future:)

Here are some 'what CAN I find in the house to feed everyone' solutions from this week...


Baby gets...carrot, tomato, spinach, quinoa and mung beans. I will grate some Parmesan and Cheddar cheese on top when I feed it to her. Not pretty, but some goodness in there, I might join her with the one spoon for you, one spoon for mummy thing! 


The bigger kids have Apple & Maple Muffins for their lunch box treats:
(again, not going to win any awards for pretty...)


2 2/3 cups flour
2 cups rolled oats
1 cup sugar
2 Tbsp baking powder
1 Tbsp ground cinnamon
1 cup milk
2/3 cup oil
1/2 cup maple syrup
2 egg whites
1 cup chopped apple

Mix dry, then mix wet, then combine. Bake at around 180 for 20ish minutes.
I put at maple icing on top at the kids request...thanks mum:D
I plan to try these without the sugar next time and I used wholemeal flour.
